lots of lunch!
Chicken Salad Sandwich.
Thanks to a reader (my dad) commenting that I haven’t posted in a while, I’m getting back into the swing of packing and posting my lunch again.
grilled chicken in a salad of mixed greens, gouda, apples, and sunflower seeds. topped with balsamic.
today was a hodge podge of lunch: leftover pasta, my favorite sesame cracker + roasted red pepper hummus, and chocolate pudding.
all over the place, sure, but still delicious!
Not to toot my own horn or anything but today’s sandwich and soup combo was excellent! But… I ate so much I could have used a good nap after lunch.
i didn’t even realize it at the time but quickly realized my mistake when i smelled the burning bread. Over toasted my sandwich bread today. Lunch wasn’t miserable, but I’ve had much more delicious in the past.

along with my sandwich I had chocolate pudding and strawberries & grapes. so good!
I will probably be eating this turkey chili all week. But i don’t mind. It was a fun Sunday project and it tastes delicious! I got so carried away yesterday i forgot to take a photo, so here it is. Yummers!!
I was very excited for today’s lunch. My goal this week was to get a hard boiled egg on a sandwich and I did it! In the most delicious way by putting together a Turkey, egg, avocado on wheat bread sandwich, yummers!! This was a good good lunch day. How am I going to top this next week?
I’ve been playing around with eggs lots lately, I put them on my dinner salads and I’ve been making some Egg McMuffin style creations with them too!

rob has been obsessed with potato salad since last week, so he whipped up another (even better batch) on sunday night. soooo delicious.
Turkey, Tomato, Lettuce, Mayo and BRIE CHEESE!! yummers! Made with love, I am too good to myself sometimes!
This weekend I made some Tuna Noodle Casserole and brought it for lunch today. Tuna Casserole always needs a good potato chip topper if you ask me! I took a picture of me making the casserole while wearing my slanket and apron. In retrospect it looks like a fire disaster waiting to happen, Now I know. I am also including a picture of my coworker Emanuel’s lovely salad. Yummers!
